Ingredients

1 large English cucumber, peeled and chopped

1 ripe avocado

1 small garlic clove

2 tablespoons finely chopped shallot

Juice of 1 lime

2/3 cup vegetable broth

1/4 cup Greek yogurt

2 tablespoons fresh dill, chopped

2 tablespoons fresh basil, chopped

2 teaspoons extra virgin olive oil

Salt and black pepper to taste

Instructions

Add the cucumber, avocado, garlic, shallot, lime juice, vegetable broth, Greek yogurt, dill, basil, olive oil, salt, and pepper to a blender.

Blend until completely smooth and silky.

Adjust the consistency with a little additional broth if desired.

Taste and adjust seasoning with additional salt, pepper, or lime juice.

Transfer to a covered container and chill for 1–2 hours.

Serve cold with fresh herbs and a drizzle of olive oil.

One of the things I love most about this soup is how luxurious it feels despite using just a handful of simple ingredients. The cucumber brings freshness, the avocado creates a velvety texture, and the herbs add brightness and depth.
For a thinner soup, add a little extra broth. For a richer texture, add a touch more avocado.
For an extra layer of flavor, finish with a drizzle of Herbes de Provence olive oil before serving.
