Some recipes begin with a flavor. This one began with a color.
I found a small packet of blue spirulina at Phoenix Spice Company, and its brilliant blue shade immediately reminded me of Santorini, the whitewashed villages, blue domes, and sparkling Aegean Sea.
Blended with coconut milk, frozen banana, Greek yogurt, vanilla, and fresh mint, it became something richer and creamier than I expected. The banana gives it natural sweetness, the yogurt adds a velvety texture, and the mint brings the fresh little lift it needed.
The blue spirulina creates its dreamy color naturally, transforming a simple coconut smoothie into something that feels like a tiny vacation in a glass.
Because soft food recipes do not have to be boring. Sometimes, they can be beautiful, playful, and surprisingly special.

Ingredients
- ¾ cup coconut milk
- ½ frozen banana
- ¼ cup plain Greek yogurt
- 4–5 fresh mint leaves
- ¼ teaspoon vanilla extract
- Tiny pinch blue spirulina, about ¹⁄₁₆ teaspoon
- Optional: 1 tablespoon unsweetened shredded coconut

- Small fresh mint leaves
- Unsweetened shredded coconut
- Lime zest
- Tiny pinch of blue spirulina for decoration
Instructions
- Add the coconut milk, frozen banana, Greek yogurt, mint, vanilla, and blue spirulina to a blender.
- Add the shredded coconut, if using.
- Blend on high until completely smooth and creamy, about 30–45 seconds.
- Taste and add another mint leaf if you would like a fresher finish.
- If the smoothie is thicker than you prefer, add another splash of coconut milk and blend again.
- Pour into a glass and garnish with fresh mint, shredded coconut, or a little lime zest.
- Serve immediately.

The first version was deliciously creamy, but it needed one small detail to bring it to life. A few fresh mint leaves added just enough brightness to balance the coconut, banana, and vanilla without overpowering them.
Blue spirulina is incredibly concentrated, so begin with the smallest pinch. You can always blend in a little more, but the soft, pale-blue color is part of what makes this smoothie feel so gentle and elegant.
The exact thickness will depend on your coconut milk and the size of your banana. Add a splash more coconut milk for a thinner, more sippable drink, or a little extra frozen banana for a thicker smoothie.
For another layer of freshness, add a small amount of lime zest. It pairs beautifully with both coconut and mint without changing the smoothie’s creamy texture.
